We offer two types of preserves based on wild meat: canned preserves and pickled preserves.
The preserves in centerboard get their name from the vessels used by our ancestors to preserve meat. The ingredient for preservation is extra virgin olive oil, to which spices are added to enhance the flavor.
Pickled preserves are prepared with vinegar, olive oil, salt and spices. In this type of preserves, the main preservative agent is vinegar.
The preparation of canned food allows us to enjoy its properties and its flavor for longer. In many cases, the addition of the necessary ingredients to prepare canned foods increases their nutritional value.
Preserves of bush meat have a longer shelf life than meat in its original form. This makes it possible for us to store them up to two years without refrigeration and enjoy their flavors and textures at any time.
Canned and pickled preserves have characteristics that are beneficial for both our health and our economy.
High nutritional value
Preserved foods maintain their nutritional value. The elaboration process allows to preserve the same properties of fresh food without resorting to the use of additives. In addition, the incorporation of ingredients and spices necessary for conservation adds other essential nutrients to our products.

All our preserves are made by hand, following traditional recipes and are free of artificial preservatives.

Whole pickled partridge
Our partridge preserve is elaborated in a natural way and faithful to the traditional recipe, free of additives. It can be served as a single dish or incorporated in salads.
Our preserves are made with the best loins of animals raised in freedom and fed naturally. The ingredients that complete the traditional recipes are obtained in the area, they are of organic origin and the final result is an ecological product of artisanal elaboration.

Wild boar caps on luff
- Rye bread
- Extra virgin olive oil
- 2 Red peppers
- 1 jar of preserved boar in centerboard
- Clean the peppers by removing the stem and seeds and cut them in julienne.
- Peel the garlic and leave whole
- Put 3 tablespoons of extra virgin olive oil in a pan.
- Heat it slowly.
- When the oil has warmed a little, put the garlic whole. The garlic should not be fried, what we want is for the oil to be impregnated with the aroma of garlic.
- Add the peppers cut in julienne, sprinkle with salt and place a lid.
- Let it cook for 10 minutes on a low heat.
- When poached, remove the fire.
- Cut the bread into slices, sprinkle with a little pepper and sprinkle with oil.
- Put on a tray in the oven for 10 minutes at 180 degrees.
Preparing the cover
- Place the bread on the tray or plate on which it will be served.
- Put a slice of boar in a pot on top.
- Garnish with the pepper strips.
